Chads Texas Chili
Chads Texas Chili is is loaded with beef and beans and absolutely full of flavor! This chili is hands down one of my favorite meals (and I love it because it’s easy to make)!

Servings: 12 or more
Ingredients:
- 7 - Slices of thick bacon
- 1.5 lbs - Ground beef
- 1.5 lbs - Brisket
- 1 - Medium Onion, diced
- 6 - Cloves of Garlic
- 1T - Paprika
- 1T - Cumin Powder
- 3.5 T - Texas Chili Powder
- 1/2 t - Onion Powder
- 1 quart - Beef Broth
- 1/2 cup - Strong Black Coffee
- 2 - 14.5 oz Can Organic Petite Diced Tomatoes In Juice
- 2 - 16 oz Can Bushes Navy Beans
- 2 - 16 oz Can Pinto Beans
- 1 - Can Rotel Habanero
- 1/2 - Ghost Pepper Finely Chopped
- 2T - Extra Virgin Olive Oil
- 1T - Maple Syrup
Preparation directions:
- I like to mix the paprika, cumin Texas chili powder and onion powder in a small container and then dump it all at one time,
Cooking Directions:
- In a cookie sheet, cook 7 pieces of bacon until crispy.
- Set aside the bacon and pour the bacon grease in a large stock pot.
- Add the ground beef and brisket to the stock pot and cook till brown.
- Season liberally with salt, pepper, and onion powder while browning to season the meat.
- In a fry pan, add the olive oil, onions, garlic and ghost pepper and sauté until the onions are caramelized.
- When the ground beef and brisket is brown remove it from the pot and drain the juice.
- Add the ground beef, brisket, spices and onions to a crock pot and mix well.
- Add the coffee and 2 c. of the beef broth. Stir well.
- Open the tomatoes, beans, beef broth and Rotel to the mix.
- Chop the bacon into small pieces and add to the mix.
- Place the lid on the crock pot and cook over low-medium (simmer gently) for 2 ½ - 3 hours.
- Add maple syrup, stir and taste.
